This image shows Vivian Welborn, dietician and professor in the Department of Home Economics at Appalachian State Teachers College (1929-1967) in the 1960s. Vivian Welborn taught in the Home Economics from 1944 until 1974, and served as a dietician for Food Services in the cafeteria from 1948 to 1963.
