This image shows Professor Joan Terry of the Department of Home Economics in the College of Fine and Applied Arts at Appalachian State University (1967-current) weighing sifted flour on a scale in a test kitchen in the 1970s. The Department of Home Economics is now the Family and Consumer Sciences Department and provides graduate and undergraduate programs in child development, nutrition, apparel and textiles, and family and consumer sciences.
